Doom Guy,@stoniewylder, IIRC it was stated that Iroh actually directed natural lighting as part of his training when learning the methods of water bending to learn how to do it. And even Zuko went to a place to get struck by lightning to learn how to do it but it never did but still it shows he was somewhat confident in being able to redirect it.

Iroh reacted to real lightning in the first season before we knew lighting redirection was a thing
Tbf though he seemed to sense it beforehand which makes sense given the area where the lightning strikes is going to form positively charged ions while the clouds above will form negatively charged ions. This all falls under the category of "plasma manipulation" which is essentially what firebending is.

Doom Guy: The problem with your assumption is that the lightning feats in question are not air-to-ground bolts and notable characters react to them no differently from having other types of projectiles launched at them by enemy benders.
Also, notable characters within Avatar would actually have low-hypersonic combat and reaction speeds as some benders like Aang and Korra have reacted to explosions, that are anywhere from 1800 to 3000 m/s depending on the velocity of the explosion.
